Hummus

I love hummus. I eat it as a snack or a whole meal…even for breakfast sometimes! Store-bought hummus is great, but making it yourself takes less than 10 minutes and will blow your store-bought hummus out of the water! Eat it on a beautiful hummus platter like the one pictured below or add to my Greek Burger recipe!

 
 
 
 

RECIPE - Hummus, yields 6-8 servings
TIME - 8-10 minutes

INGREDIENTS

  • 1 15-oz can chickpeas/garbanzo beans

  • 1/3 cup tahini (I used Joyva)

  • 3/4 teaspoon salt

  • Juice of 1 lemon (about 3 tablespoons)

  • 4-6 garlic cloves, minced

  • 2 tablespoons cold water, plus up to 2-3 more tablespoons as needed

  • Additional add-ins such as chili garlic paste, roasted garlic, roasted red peppers, pesto (about 1-2 tablespoons of desired add-in)

  • Hummus fixings such as pita chips, cucumbers, peppers, carrots

DIRECTIONS

  1. Combine tahini, garlic, lemon juice, salt, and cold water in a nutribullet, blender, or food processor and blend until smooth, about 30-60 seconds.

  2. Add in chickpeas and blend until smooth, about 2-3 minutes.

  3. If making plain hummus, check consistency and add more cold water a little at a time until desired consistency.

  4. If adding in additional toppings, add in and blend until desired consistency.
