Mojo-Inspired Pork
Last fall I did a lot of research on mojo pork mostly because it seemed incredibly delicious, but also because I’d actually never had it! It’s full of fresh flavors and quite literally mouth-watering. The recipe below is my take on it. It tasted like heaven in my mouth. If you eat pork, you need this in your lives. It cooks all day in your crockpot so if you’re working from home right now, you may want to make it on a day where you’ll be out of the house or you’ll probably be drooling all day. Enjoy!

RECIPE - Mojo-Inspired Pork, yields 6-8 servings
TIME - 30 minutes prep, 8 hours in crockpot, additional 20 minutes to cook
INGREDIENTS
3-4 lb pork shoulder
4-6 cloves of garlic, minced
Enough salt to coat pork shoulder thoroughly
1 teaspoon ground cumin
1 teaspoon fresh ground black pepper
1/2 teaspoon red pepper flakes
2 bunches fresh oregano
1-2 bunches fresh parsley or mint to finish
Fresh juice from 2 oranges
Fresh juice from 4 limes
1/4 cup olive oil
DIRECTIONS
Evenly rub salt and black pepper over pork shoulder.
Combine juice from oranges and limes in a food processor or blender along with garlic, fresh oregano, cumin, and red pepper flakes. Blend until smooth and set aside.
Sear all sides of pork shoulder until brown and crispy in pan or crockpot if your crockpot has a browning feature.
Add pork to crockpot and pour juice mixture over it. Cook on low for 8 hours. (If you do not have a crockpot, you can put the mixture in a covered oven-safe pan and cook at 325 degrees F for 2 hours.)
Once meat is cooked, shred and place on a lightly greased baking sheet.
Immersion blend (or ladle into a regular blender to blend) all remaining liquid. Drizzle over shredded meat until thoroughly covered.
Broil meat in oven on high for 3-5 minutes.
Drizzle meat again with more blended sauce and broil for an additional 3-5 minutes for additional crispness.
Serve pork alone with rice and beans or in tacos. Serve with any remaining sauce and salsas of choice.
