Greek Chicken Burgers

Chicken burgers are incredibly versatile and can hold tons of flavor. These Greek-style chicken burgers are juicy and delicious. I like to top them with fresh, thinly sliced veggies like cucumbers, bell pepper, and red onions to add a nice crunch. I then add hummus and tzatziki to serve as my burger sauces. Super scrumptious sandwiches perfect for lunch or dinner!

RECIPE - yields 4 burgers
TIME - 30-35 minutes

INGREDIENTS

  • 1 lb ground chicken 

  • 3 tablespoons tzatziki sauce (I have a simple recipe for tzatziki here.)

  • 2 teaspoons lemon juice

  • 1/2 cup crumbled feta cheese

  • 2-3 cloves minced garlic

  • 2 tablespoons parsley, finely chopped

  • 1/2 teaspoon salt 

  • 1/4 teaspoon pepper

  • Fresh buns, pita, or lettuce as burger top and bottom (I use Brioche buns)

  • Thinly sliced red onion, cucumbers (I use the mini Persian cucumbers and make long strips vs discs), and bell peppers for burger topper

  • Hummus and tzatziki for burger topper

DIRECTIONS

  1. Add all ingredients excluding toppings and buns to a bowl. Stir to combine. Form 4 patties.

  2. Add a drizzle of olive oil (optional: and 1/2 tablespoon of butter) to skillet and cook burgers for 7-9 minutes on each side (until chicken is 165 degrees F).

  3. Add to bun of choice and top with hummus, red onion, and thinly sliced cucumber slices, and bell peppers. 

*Tip #1: The mini Persian cucumbers always come in a package of six. I use one when I make my tzatziki sauce and one on top of the burgers. For a tasty side with your burgers, dice the remaining four cucumbers, add in an equal amount of halved cherry tomatoes, a teaspoon of olive oil, a tablespoon of white vinegar, a teaspoon of sesame seeds, and salt and pepper to taste. You’ll have a yummy and healthy side to go with your burgers!

*Tip #2: You can buy all these things and use any leftovers for Greek salads!
