Mixed Berry Jam
Do you ever buy beautiful fresh fruits and vegetables and then let them sit in your fridge while you choose to get take out or eat packaged foods? Me too! I had some tasty biscuits and some berries that were on their last leg, so I turned lemons into lemonade (or berries into jam in this case).
Mixed Berry Jam - make your mornings better!
RECIPE - yields 8-10 oz of jam
TIME - 30 minutes

INGREDIENTS
2.5 cups berries of choice (I used half strawberries and half blueberries)
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
1/4 teaspoon lemon zest
Pinch of salt
DIRECTIONS
Dice berries into approximately equal sized cubes.
Add berries, sugar, lemon juice, and salt to sauce pan.
Bring to boil. Continue to boil and stir constantly for 20-25 minutes until liquid becomes thicker.
Add lemon zest. Continue to stir for approximately 1 more minute.
Remove from heat and let cool.
Store in a glass container with lid or mason jar.
